The Three Rules Of Pairing Honey With Cheese
1. The Flavour Balance
The flavour balance is important when pairing honey with cheese. One flavour should not dominate the other.
So strong tasting honeys should be paired with strong tasting cheeses and vice versa.
2. Use More Cheese And Less Honey
A common mistake people make when pairing cheese with honey is that they smother the cheese with honey.
Using too much honey drowns away the flavour of the cheese. The ideal amount of honey to use on cheese is an amount small enough to cover a thin film over the cheese.
3. Use An Accompaniment
Breads, fruits, vegetables and nuts can be added to your pairing to enhance the tasting experience and engage multiple layers of flavour.
Try one of the following:
Breads: pepper crackers or herbal flatbreads
Fruits: fresh figs, berries or grapes
Vegetables: olives or sundried tomatoes

Chop up some blue Stilton cheese, add toasted walnuts then fold half a teaspoon of the Coffee Bean honey to the mixture ensuring that the honey touches all the pieces.
Raw Organic Rivera Gum Honey From Uruguay
Slice some halloumi cheese into small rectangles about 1cm thick. Grill them under both sides are covered in a golden brown crust. Smear a dab of Rivera Gum honey onto each rectangle, add some twigs of rosemary and eat while still warm.
Raw Organic Pink Lychee Honey From Mexico
Slice some medium cheddar cheese, arrange on pepper crackers, add a thin slice of apple then touch a small amount of Pink Lychee honey on top.
The cheese should appear sticky. If you can see honey dripping off you have put too much honey on.
Raw Organic Rainforest Honey From Brazil
Get some Camembert or brie cheese and leave it out of the fridge until it reaches room temperature.
Dab a small amount of Rainforest honey onto the cheese then place some chopped fresh figs and walnuts onto the cheese. Serve on pepper crackers.
